The centuries-old process of grinding the tea leaf into a powder & whisking it in water has evolved from being prepared ceremonially as part of the ancient Japanese Tea Ceremony, to a sought-after antioxidant rich tea & ingredient in smoothies, baked goods & seasonings today. The green tea used in matcha is shade grown to encourage the plant to produce increased chlorophyll levels resulting in a vibrant green leaf with rich umami notes. Because the entire tea leaf is being consumed vs. the infusion of the tea leaf, increased antioxidant levels are ingested increasing the potential health benefits.
